Chicken, Soup With Noods

Ingredients

  • Garlic
  • A couple of tablespoons of oil

olive oil is preferred, but you can substitute canola. 

  • About 3-4 carrots
  • 2 Onions
  • 4 ribs celery, chopped
  • 2 bay leaves
  • Salt
  • Pepper
  • Garlic
  • 4 32oz containers of chicken broth or stock
  • 4 32oz containers of chicken broth or stock
  • 3 chicken breasts
  • Bag of egg noodles (you can substitute with other types of noodles like bowtie pasta)
  • Parsley
  • Fresh Dill
  • Directions

Directions

  1. Prep Work, 
  • Cut chicken into cubes, place in a bowl and sprinkle with salt and pepper. Toss to coat chicken evenly. 
  • Clean celery and cut
  • Clean, peel and cut carrots
  • Pre Heat oil in a large pan
  • Peel & Cut Onions
  • Wash and chop dill and parsley(place in the fridge until needed) 

 

  1. In place garlic to your preferred amount of garlic, for me the more the better, so I I add about a tablespoon.  If you don’t have fresh or crushed garlic you can add some garlic powder after you add your broth to the pot at step 4
  2. Add Carrots and stir for 2 minutes, then add celery and onion, continue storing at medium to high heat until the carrots are slightly tender. 
  3. Transfer the veggies to a large pot that you will use for the soup. Add chicken broth and put on low heat, stirring the veggies from the bottom. 
  4. In the veggie pan add the chicken, if you need to add more oil do so but the less the better. Sautee chicken for about 4-5 minutes on medium heat.
  5. Bring your soup pot to a boil, slowly add the chicken. Then add pasta of your choosing. Cook the pasta as you would normally turn off the heat to simmer about 4 minutes earlier than recommended cook time. Add dill and parsley and let simmer for about 10 more minutes
  6. Eat your soup! 

Long Winded Story.

I can’t stand having to scroll through a novel to get a recipe, so here is the story and my thoughts about it. Chicken noodle soup is the cure-all for the common cold in my honest opinion. Soup is one of my favorite food groups. Now you could make your own broth, that I don’t have the excitement to write directions down for, so stick with the basics and go store-bought if you can. I prefer egg noodles, but while making my soup this round we had to make do with bow tie pasta. The bowtie’s hold longer and dont get as mushy as the egg noodles do. 

 

Also if you aren’t feeding for an army like we are you can probably half the recipe, we also go a little overboard because we enjoy eating it for leftovers for the next couple of days.
